Prepare the Egg Mixture

Crack the eggs into a small bowl. Add the milk, salt, and pepper. Whisk together until the yolks and whites are fully combined and the mixture is a uniform yellow color with slight foam. This is your egg mixture for the omelette.

Heat the Pan and Melt Butter

Place a non-stick skillet over medium-low heat. Add the butter to the pan and allow it to melt completely. Swirl the pan to coat it evenly with the melted butter. The pan should shimmer slightly. Be careful, the pan and butter will be hot.

Pour and Cook the Egg Base

Pour the egg mixture into the hot skillet. Let the mixture cook for about 30 to 60 seconds, until the edges begin to set. You’ll see the eggs start to solidify around the edges and bottom. It's important to use low to medium heat so the eggs cook evenly and don't burn.

Cook Through and Add Fillings

Use a spatula to gently lift the cooked edges of the omelette, tilting the pan so that the uncooked egg mixture flows underneath. Continue this process until most of the egg mixture is set but the center is still a little moist, about 2 to 3 minutes. This ensures the omelette is cooked through but remains soft. If using, sprinkle your optional cheese and vegetable fillings evenly over the half of the omelette.

Fold the Omelette

Use your spatula to carefully fold the omelette in half, covering the fillings. Let it cook for another 30 seconds to 1 minute to melt the cheese, if you added it. The omelette should be cooked through.

Slide the omelette from the pan onto a plate. Be careful, the pan and omelette are very hot. Serve immediately and enjoy your omelette while it’s warm.
