Evenly spread the shredded mozzarella cheese onto the prepared baking sheet in small, flat circles, leaving some space between each circle. About 2 tablespoons of cheese per crisp. Ensure that the cheese is not piled too high to promote even melting and crisping.

Add Pepperoni

Place 3-5 pepperoni slices on top of each cheese circle, slightly overlapping. This will allow the flavors to meld as they cook. If using larger pepperoni slices, you can cut them into smaller pieces.
