Preheat Oven and Prepare Baking Sheet

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. This prevents sticking and makes cleanup easier.

Combine Dry Ingredients

In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, and salt. Ensure there are no clumps of psyllium husk powder as this can affect the dough's texture.

Add Wet Ingredients and Let Dough Rest

Add the eggs, warm water, and melted butter to the bowl with the dry ingredients. Use a spatula or a spoon to mix until well combined. The dough will be sticky and thick. Let the dough rest for 2-3 minutes to allow the psyllium husk to absorb the liquid, making it easier to handle.

Roll Out the Dough

Place the dough onto a piece of parchment paper. Cover the dough with another sheet of parchment paper and use a rolling pin to roll it out into a rectangle, about 1/4 inch thick. Be careful when using rolling pin to not pinch your fingers. If you don't have a rolling pin, you can use a smooth, clean jar or bottle.

Spread the softened butter evenly over the rolled-out dough. Make sure the butter is soft but not completely melted, as this will make it easier to spread.

Mix Filling and Sprinkle

In a small bowl, mix together the cinnamon and sweetener. Sprinkle the cinnamon-sweetener mixture evenly over the buttered dough. If you don't have a small bowl, just use a small plate.

Roll and Slice

Starting from one of the long edges, carefully roll the dough into a log. Use a sharp knife to slice the log into 8-10 equal rounds. For even slices, you can cut the log in half, then cut each half in half, and so on. Be cautious when using a knife.

Bake the Cinnamon Rolls

Place the cinnamon rolls onto the prepared baking sheet, leaving some space between each roll. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown. The edges should be crispy and the center cooked through. Use oven mitts when handling the hot baking sheet to avoid burns.

Prepare Frosting (Optional)

While the rolls are baking, prepare the frosting (optional). In a mixing bowl, combine the softened cream cheese, softened butter, sweetener and vanilla extract. Mix until smooth and creamy. If you do not have an electric mixer, you can use a fork and a bit of elbow grease.

Cool and Frost

Remove the cinnamon rolls from the oven and let them cool slightly on the baking sheet before transferring to a wire rack. This prevents the rolls from becoming soggy. If using, frost the rolls while they are still warm but not hot, this will allow the frosting to slightly melt.
