Ingredients

Fish

  • 1
    1.5 lbs fish fillets

Herbs

  • 1
    0.25 cup fresh parsley
  • 2
    0.25 cup fresh thyme
  • 3
    0.25 cup fresh rosemary

Other

  • 1
    3 unit garlic cloves
  • 2
    0.25 cup olive oil
  • 3
    0.25 cup lemon juice
  • 4
    0.5 cup breadcrumbs
  • 5
    0.25 tsp salt
  • 6
    0.25 tsp black pepper

Directions

1

Preheat Oven

Preheat your oven to 400°F (200°C). This ensures the fish cooks evenly and the crust gets nice and crispy. Make sure your oven rack is in the center position.

2

Prepare Herbs and Garlic

Finely chop the fresh parsley, thyme, and rosemary. Mince the garlic cloves. Combining the herbs and garlic at this stage will allow their flavors to meld together.

3

Mix Herb Crust

In a medium bowl, combine the chopped herbs, minced garlic, olive oil, lemon juice, breadcrumbs, salt, and black pepper. Mix well to create the herb crust mixture. The mixture should be slightly moist and clump together.

4

Prepare Baking Dish

Lightly grease a baking dish or sheet pan with olive oil. This prevents the fish from sticking. Place the fish fillets in the greased dish.

5

Apply Herb Crust

Evenly spread the herb mixture over the top of each fish fillet, gently pressing it to adhere. Make sure the crust is even and covers the entire surface of the fish.

6

Bake the Fish

Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature of the fish should reach 145°F (63°C). Be careful when removing the hot baking dish from the oven, use oven mitts to avoid burns.

7

Rest and Serve

Once cooked, let the fish rest for a couple of minutes before serving. This allows the juices to redistribute, resulting in a more tender fish. Garnish with a lemon wedge before serving.

Recipe Tips

  • Use any firm white fish such as cod, haddock, or tilapia.
  • Adjust herb amounts to your preference. You can also use dried herbs, but reduce the quantity to about 1/3 since they are more concentrated.
  • For a crispier crust, broil for the last 2 minutes of cooking, but watch carefully to avoid burning.
  • Store leftover fish in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave.
  • When cleaning, wash all surfaces and tools used to prepare the fish with soap and hot water to prevent cross-contamination.
