Ingredients

Protein

  • 1
    1 lb ground beef

Vegetables

  • 1
    1 head broccoli
  • 2
1 medium bell pepper (any color)
  • 3
    1 medium onion
  • 4
    2 cloves garlic cloves

Sauce

  • 1
0.25 cup soy sauce (low sodium)
  • 2
2 tablespoon tablespoon of sesame oil
  • 3
    1 tablespoon tablespoon of cornstarch
  • 4
    1 tablespoon tablespoon of honey
  • 5
1 teaspoon teaspoon of ginger (ground)
  • 6
0.5 teaspoon teaspoon of red pepper flakes (optional)

Garnish

  • 1
    0.25 tablespoon sesame seeds
  • 2
    0.25 cup green onions, sliced

Base

  • 1
4 cups cooked rice or quinoa

Directions

1

Prep Vegetables

Wash and chop all vegetables. Cut the broccoli into florets, dice the bell pepper and onion, and mince the garlic. Set aside.

2

Prepare Stir-Fry Sauce

In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, honey, ground ginger, and red pepper flakes (if using). This mixture will create the sauce for the stir-fry.

3

Cook Ground Beef

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is browned and fully cooked. Drain excess fat if needed.

4

Sauté Aromatics

Add the chopped onion and garlic to the skillet with the cooked beef and saute for 2-3 minutes, until fragrant and the onion becomes translucent. Be careful not to burn the garlic.

5

Stir-Fry Vegetables

Add the broccoli florets and diced bell pepper to the skillet. Stir-fry for about 5-7 minutes, until the vegetables are tender-crisp, meaning they are cooked but still have a slight bite to them.

6

Add Sauce and Thicken

Pour the prepared sauce over the beef and vegetables. Stir continuously until the sauce thickens and coats all the ingredients evenly. This should take about 1-2 minutes. The sauce will become glossy and cling to the ingredients.

7

Serve

Remove from heat. Add sesame seeds and green onions to the stir-fry and stir well. Divide the cooked rice or quinoa into bowls, top with the ground beef stir-fry.

Recipe Tips

  • For a spicier kick, add more red pepper flakes or a dash of hot sauce.
  • If you don't have sesame oil, you can substitute with olive oil or another neutral oil, but the flavor will be slightly different.
  • You can easily swap out the vegetables for others you enjoy, such as snap peas, carrots, or zucchini.
  • Make sure to not overcook the vegetables, they should be tender-crisp for the best texture.
  • For easier cleanup, use a non-stick skillet or wok. Ensure the skillet is hot before adding the beef to avoid it from sticking.
  • Store leftover stir-fry in an airtight container in the fridge for up to 3 days. Reheat thoroughly before serving.
  • Customize the dish with different protein sources, such as chicken or tofu
